Beef tenderloin

in chimichurri sauce


- 250g beef tenderloin
- 1 yellow pepper
- 1 red pepper
- handful baby corn
- handful green asparagus

- pinch of dried oregano
- 80g parsley
- 320ml corn oil
- 2 garlic cloves
- 12g black pepper corns
- 12g salt
- 4g chilli flakes
- 20ml white wine vinegar

1 Make the chimichurri sauce by chopping parsley and garlic and place them in a mixing bowl.
2 Add the dry oregano and mix with the corn oil, black pepper corn and the chilli flakes.
3 In a separate bowl, dissolve the salt into the vinegar and add it to the previous mixture.
4 Season to taste and then apply to the steak to marinate.
5 Fry the steak in the pan until cooked according to your preferance.
6 Grill the vegetables until warm, still slightly crunchy and lightly charred.
7 Paint the steak with more chimichurri sauce, place the vegetables on the plate and serve.
